Baked Salmon Sushi Cups

Ingredients

  • 5oz salmon

  • 1 avocado

  • 400g sushi rice

  • 1 pkg nori squares

  • salt and pepper

  • lemon

  • soy sauce

  • OPTIONAL: chopped green onions, teriyaki sauce

Instructions

  1. Cube the fish into small squares, approximately 1cm in size.

  2. Mix the salmon together with soy sauce, lemon, sesame oil, and your favorite spices (salt, pepper, chili flakes, etc) to taste.

  3. Take a muffin tin and line the bottom with nori squares. Press some sushi rice into the nori cup and top with salmon cubes.

  4. Bake for 15 minutes at 400°F or until it reaches an internal temperature of 145°F.

  5. OPTIONAL: Top with fresh avocado chunks and chopped green onion. Drizzle some teriyaki sauce on top.
