Prep the Eggplant Cut the eggplant into medium-sized cubes. Place the pieces on a paper towel and gently press with another towel to remove excess moisture. Once dry, toss the cubes in starch until evenly coated.
Bake Until Crispy Preheat your oven to 200°C (390°F). Line a baking tray with parchment paper, spread the eggplant cubes in a single layer, and bake for 30–40 minutes until golden and crispy. Baking time may vary depending on your oven.
Assemble the Salad Roughly chop the tomatoes and place them in a large bowl. Add the baked eggplant and freshly chopped cilantro.
